SPICY AFRICAN PEANUT STEW
YIELD: Serves 10 – 12
INGREDIENTS
- ¼ cup Oil, for frying
- 2 medium Onions, chopped
- 4 tsp Garlic & ginger paste
- 1.2 kg Stewing beef
- 70 g (1 sachet) Spicy Africa Seasoning (08397017)
- 3 large Potatoes, cubed
- 2 large Carrots, diced
- 120 g (1 sachet) Beef Stew R/P (08443024)
- 5 cups Water
- ¾ cup, Peanut butter, chunky
- 2 Tbsp Fresh coriander, finely chopped
METHOD
1. Heat the oil in a large pot and fry the onions until soft and transparent. Add the garlic & ginger paste. 2. Add the meat and simmer for 30 - 35 minutes or until all the liquid has cooked away and meat starts to brown. 3. Add the Spicy African Seasoning and fry for ± 2 minutes. Add the potatoes, carrots, Beef Stew R/P and half of the water (2½ cups). 4. Cover the pot and simmer for 15 - 20 minutes, stirring occasionally. Add the peanut butter and gradually add the remaining water. Simmer uncovered until the sauce has thickened and the potatoes are soft. 5. Add the coriander and mix through to serve.
