CHORIZO & TOMATO SALAD

YIELD: Serves 6

INGREDIENTS

  • 2 Tbsp Oil, for frying
  • 150 g Chorizo (made using Chouricos R/P – 02077005), roughly sliced/chopped
  • 3 cloves Garlic, sliced
  • 24 Cherry tomatoes, halved (various colours)
  • 4 Spring onions, finely chopped
  • 1 Tbsp White wine vinegar
  • 2 Tbsp Flat leaf parsley, chopped
  • Pinch Black Pepper Ground (08182000)
  • Pinch Salt

METHOD

Heat oil in a pan and fry the chorizo until crispy. Remove chorizo from the pan. Add the garlic slices to the oil remaining in the pan and fry for 1 – 2 minutes or until fragrant. Remove from the heat and add the chorizo, tomatoes, spring onions, vinegar and parsley. Season to taste. Toss all ingredients together before spooning into a serving dish.
