Breakfast Fritter Stack

YIELD: Serves 6

INGREDIENTS

Broccoli, baby marrow & Feta Fritters

2 large Baby marrows, grated

1/2 medium Broccoli, finely chopped

3 Eggs beaten

250 g (1/2 sachet) Master Sweet Batter R/P (08169030)

15 g Lemon & Herb Sprinkle (04185010)

1 round Feta cheese, crumbled

1/3 cup Oil, for frying

Breakfast Stack

2 medium Avocados, sliced

6 Eggs, fried

1/2 tsp Smoke Flavoured Prapika

1/2 cups Creamy Ranch Dressing (07596040)

12 Chicken sausages (made using Wiltshire R/P 03398010)

1/2 cup Sweet Chilli Sauce (07657040)

METHOD

Mix together the baby marrow, broccoli and beaten eggs. Sift the Master Sweet Batter into the mixture, add the Lemon & Herb Sprinkle and feta. Mix to combine. Heat the oil in a pan over medium heat. Drop heaped tablespoons of the batter into the pan. Shallow-fry until golden brown on both sides and cooked through in the centre. Remove from the pan and drain on paper towel before stacking. Top with avocado, fried egg and Smoke Flavoured Paprika. Drizzle with Creamy Ranch Dressing and serve with chicken sausages and Sweet Chilli Sauce on the side.
