BERRY JELLY & CUSTARD WITH VANILLA MOUSSA
YIELD: Makes 1 large dessert or ± 20 x 200 ml cups
INGREDIENTS
BELLY JELLY
- 500 g (1 sachet) Strawberry Flavoured Jelly Powder (08948030)
- 1.25 L (5 cups) Water, boiling
- 1 L (4 cups) Water, chilled
- 250 g (½ sachet) Instant Custard Powder (08957030)
- 1.5 L (6 cups) Milk
MOUSSE TOPPING
- 125 g (¼ sachet) Vanilla Flavoured Mousse (08955030)
- 250 ml (1 cup) Milk, chilled
- 185 g (1 cup)
METHOD
1. Mix the Strawberry Flavoured Jelly Powder with the boiling water until dissolved. Stir in the cold water. Pour into a tray and place in the fridge for ± 4 hours to set. 2. Whisk the Instant Custard Powder into the milk in a large bowl for ± 2 minutes or until thickened. 3. Add the Vanilla Flavoured Mousse to the milk in a mixing bowl and whisk for ± 10 minutes or until the mixture is whipped and forms soft peaks. 4. Assemble the dessert: Spoon half of the set jelly into a serving dish or ± 20 individual containers and top with the custard. Spoon the remaining jelly on top. Top with the vanilla mousse and mixed berries to serve.
Chef’s Tip: Other jelly powder flavours can be used. Ensure water is boiling and jelly powder has completely dissolved.
