BATTERED CALAMARI STRIPS & CHIPS
YIELD: Serves 8 - 10
INGREDIENTS
BATTERED CALAMARI STRIPS
- 3 kg Calamari, strips
- 800 g Fish & Calamari Batter R/P (08470930)
POTATO CHIPS
- 3 kg Potato chips, frozen
- 150 g Mild & Spicy BBQ Sprinkle (04377010)
- 190 ml (¾ cup) 1000 Island Dressing (07595040)
METHOD
1. Coat the calamari in the dry Fish & Calamari Batter R/P. 2. Immediately deep-fry the calamari at 180°C for 1 - 3 minutes or until golden brown. Place the coated calamari into the fryer with the basket fully submerged in the oil. Do not stack the calamari in the basket. Fry in batches. 3. Place chips into a fryer with the basket fully submerged in the oil. 4. Do not stack the chips in the basket. Deep-fry in batches at 170°C for 2 - 5 minutes or until golden brown and cooked through. 5. Remove from oil, drain on paper towel and sprinkle with Mild & Spicy BBQ Sprinkle. 6. Serve calamari and chips with 1000 Island Dressing.
